I would like to thank Publications International, Ltd. for this delicious recipe which can be found on page 124 of  their Glycemic Index Cookbook:

1 cup frozen unsweetened peach slices, thawed and cut into 1-inch pieces

1 cup sliced fresh strawberries

1 tablespoon sugar, divided

1/4 cup bran cereal flakes

2 tablespoons old-fashioned oats

1 tablespoon all-purpose flour

1/8 teaspoon ground cinnamon

1/8 teaspoon salt

2 teaspoons unsalted margarine, cut into small pieces

  1. Preheat oven to 325 degrees F.  Coat a 1 1/2 quart glass baking dish with nonstick cooking spray.
  2. Combine the fruit in a medium bowl.  Sprinkle with 1 tsp. sugar.  Transfer fruit to prepared baking dish
  3. Combine cereal, oats, flour, cinnamon, and salt in a bowl.  Stir in remaining 2 tsp. sugar.  Add margarine; stir with a fork until mixture resembles coarse crumbs.  Sprinkle over fruit in baking dish.  Bake 20 minutes or until fruit is hot and topping is slightly browned.

Makes 4 (1/2 cup) servings
